Tomato Soup



Ingredients

3 garlic cloves, roughly chopped

1 onion, chopped

6 Roma Tomatoes, cut into wedges

1 can deiced tomatoes

1 can Garbanzo beans

2 tbs. Oregano

1/2 tbs. salt

1/4 tbs. black pepper


Instructions

Roughly chop the garlic and onion into large chunks, it does not have to be finely chopped since they will be blended together. Drizzle olive oil in a large pot and place over medium heat, adding the chopped onion and garlic.


Stir and let cook for 5 minutes. Add the garbanzo beans, canned tomato, and Roma tomato's and allow to simmer for 15-20 minutes. Add the oregano, salt, and pepper along with the fresh basil leaves. The basil leaves do not have to be chopped. Allow to simmer for an addition 5-10 minutes.


Reduce the heat to a low setting and using a hand blender, blend the vegetables until the soup has a smooth consistency.
