Ingredients
4-5 medium sized potatoes (Either Russel or Golden)
2 stems of green onion
3 garlic cloves
Salt
Pepper
Olive Oil
Instructions
Begin by cleaning the potatoes and removing any dirt. Prepare a cooking sheet with aluminum foil. Slice the potatoes long ways into wedges and evenly distribute the wedges in the prepared pan.
Chop up the green onions and mince the garlic cloves. Drizzle olive oil over the potato wedges. Season with salt and pepper by sprinkling both over the potatoes. Spread the minced garlic and chopped green onion over the potato wedges and using your hands or a spatula toss the potato wedges until they are well coated in oil, seasoning, and the chopped vegetables.
Bake the potato wedges in the oven for 30 minutes or until they are golden brown and have some crispy edges.
Serve as a side for any main dish and enjoy!
