Gingerbread Loaf



Enjoy this delicious loaf, full of warm spices, with your loved ones this holiday season.


Ingredients

Gingerbread Loaf

1/2 cup butter, melted

3/4 cup molasses

2 large eggs

1/4 cup granulated sugar

2 cups of all-purpose flour

1 tsp baking soda

1/2 tsp salt

1 tbs ground ginger

2 1/2 tsp cinnamon

1 tsp allspice

1 tsp nutmeg

2 tsp vanilla

1 cup milk


Vanilla Icing

1 cup powdered sugar

1 tbs milk

2 tsp vanilla



Instructions

In a large bowl combine the sugar, butter, and molasses and mix at a medium speed until smooth and well combined. Add in the eggs and incorporate them fully.


Add the ginger, cinnamon, allspice, nutmeg, baking soda, salt, and vanilla to the mixture. At a low speed slowly add in the flour and mix until the flour is well combined. Slowly pour the milk into the mixture, continuing to mix at a low speed. Incorporate the milk into the mixture until it reaches a smooth consistency and all ingredients are fully mixed.


Prepare a loaf pan by greasing it with butter or oil. Set the oven to 350 degrees. Pour the mixture into the prepared pan and bake in the oven for 45-55 minutes or until a toothpick comes out clean.


Allow the loaf to cool for 20 minutes before serving without icing.


To ice the loaf, allow the loaf to cool completely.


In a small bowl whisk together the powdered sugar, 1 tbs milk, and vanilla until the icing is smooth and no clumps are left. Pour the icing over the loaf, ensuring an even glaze across the top.


Serve along with a cup of warm apple cider and enjoy in front of a roaring fire.
