Fiery Chipotle Chili



Ingredients

1 pound ground beef (93% lean)

3-4 strips of chopped bacon

Salt

Pepper

1 whole white onion

3 cloves garlic

1 ( 8 oz. ) can of diced tomatoes and green chilis

1 ( 8 oz. ) can tomato sauce

1 ( 7/5 oz. ) can of chipotle in adobo sauce

1/2 tbs. Chili Powder

2 tsp. Oregano

1 tsp. Paprika

1/2 tsp. ground cumin


Instructions

Add the chopped bacon into a pot and allow to cook until lightly brown. Remove the excess grease. Chop the onion and garlic until finely chopped and place in a large pot. Sauté the garlic and onion for 7-10 minutes until the onions begin to get a light golden color.


Add in the ground beef and mix in with the onion and garlic. Add the salt and pepper and allow the beef to brown. Once the beef has browned, add in the canned tomato, tomato sauce, and seasonings to the beef. Chop the chipotle and add to the pot. If you prefer a less spicy dish, remove the seeds from the chipotle chilis to reduce the heat level.


Bring the chili to a boil for 5-8 minutes. Reduce the heat and simmer, stirring occasionally for about 40 minutes to allow the flavors to blend.


Serve with shredded cheese, dollop of sour cream, and chopped green onion. For a healthier dairy option, substitute the sour cream for plain Greek yogurt.
