Ingredients
2 cups of semi-sweet chocolate chips
¾ cup of salted butter softened
¾ cup of unsweetened cocoa powder
½ cup granulated sugar
½ cup light brown sugar
3 large eggs
2 tsp vanilla
¼ tsp of cinnamon
¼ tsp ground coffee
¾ cup all-purpose flour
Instructions
Prepare a muffin or cupcake tin and line with cupcake wrappers or parchment paper.
In a small bowl melt half of the butter in the microwave. Once melted add one cup of the chocolate chips and whisk until the chocolate is completely melted and smooth. Set aside and allow to cool.
In a large bowl whisk the rest of the softened butter, granulated sugar, and brown sugar until well combined. Add in the eggs and whisk ensuring there are no clumps of butter. Add in the vanilla and stir into the melted chocolate until fully incorporated.
Next, sift in the flour and cocoa powder. Gently mix the flour into the chocolate, egg mixture until the batter is thick and well combined. Add the remaining cup of chocolate chips and fold them into the batter evenly.
Preheat the oven to 350 degrees F. With a large spoon, begin filling each cupcake wrapper about ¾ of the way. This should fill 12 individual cupcake wrappers. Once complete, place the baking tray in the oven and allow the brownies to bake for 20-25 minutes, or until a toothpick comes out clean. To ensure a more fudgy texture, take the brownies out at around 20 minutes. Allow the brownies to cool slightly before serving.
