Ingredients
For the salad
1 bag of kale, chopped
4 oz. feta cheese
¼ cup cranberries
¼ cup mixed nuts
For the Dressing
2 tbs mayonnaise
2 tbs orange juice
1 tbs apple cider vinegar
1 tbs olive oil
½ tsp salt
½ tsp pepper
1 tbs red onion, finely chopped
Instructions
For the dressing, in a glass jar add the mayonnaise, orange juice, apple cider vinegar, olive oil, salt, pepper, and red onion. Whisk the ingredients together and cover with a lid. Place the vinaigrette in the refrigerator for 30 minutes.
Chop the kale into thin shreds and place in a large bowl. Add the feta cheese, nuts, and cranberries to the salad and toss. Pour the vinaigrette over the salad and toss until the vinaigrette is evenly incorporated. Place the salad in the refrigerator for an hour before serving. This will allow the kale to soften up and the vinaigrette to marinate well with all the other ingredients.
