Ingredients
2 cups flour
1/4 cup sugar
1 tbs. baking powder
1/2 tsp. salt
6 tbs. butter
1/2 cup heavy whipping cream
1 large egg
1 tsp. vanilla
1 cup frozen blueberries
Instructions
Whisk the flour, sugar, baking powder, and salt together in a large bowl. Add the cubed butter and use a pastry cutter to cut the butter into the dry ingredients until you have pea-sized crumbs.
In a separate bowl, whisk heavy whipping cream, egg, and vanilla until well combined. Add the wet ingredients to the dry ingredients and stir until combined.
Add the blueberries to the mix and incorporate them evenly. Scoop the mixture onto a lightly floured surface and work together to form a ball of dough. Flatten into an 8-inch circle. Cut the dough into 8 equal-sized pieces.
Preheat oven to 350 degrees. Place the scones on a prepared pan and place them in the fridge for 10 minutes while the oven preheats.
Brush the tops with an egg wash and bake scones for 20 minutes or until the tops are lightly browned.
